Creamy Pumpkin Seeds Fenugreek Cottage Cheese With Flaxseed Paratha

Delight in this authentic Indian main-course dish made using all natural ingredients packed with protein and a bunch of essential nutrients smartly paired with a flavorful Indian flat bread.


For the vegetable dish-

  • 250 gms Fresh Fenugreek Leaves (Methi)
  • 250 gms Cottage Cheese (Paneer)
  • 1 Onion, finely chopped
  • 1 Tomato, evenly chopped
  • 2 Cloves Garlic , finely minced
  • 1 Tbsp Ginger, finely chopped
  • 2 pods Cardamom
  • 1/2 cup Cashew Nuts, finely chopped
  • 1/3 cup Pumpkin Seeds 
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder
  • 1/2 cup Fresh Coriander Leaves
  • 1 tsp Coriander powder
  • 1 tsp Garam Masala
  • 1 Dried Bay Leaf
  • 1/2 cup Water
  • Pinch of Salt

For the paratha-

  • 1 tbsp Flax Seeds Powder(Linseed Meal)
  • 1 cup Dill Leaves
  • 2 cups Whole Wheat Flour 
  • Salt to taste
  • 1 tsp Garam Masala


For the vegetable dish-

  1. Soak the fenugreek leaves in water along with a pinch of salt for 15-20 minutes. Then rinse them thoroughly.
  2. Heat a saucepan on medium flame, pour a few drops of vegetable oil into it. Add the chopped onions, cardamon, minced garlic and ginger. Sautee for about 3 minutes. 
  3. Add the chopped tomatoes to the pan and allow it to cook for another 5 minutes.
  4. Then add the cashews and pumpkin seeds to the pan and mix well. Turn off the heat.
  5. Transfer the cooked mixture into a blender and blend until smooth and creamy textured.
  6. Bring the same pan to heat again and add the rinsed fenugreek leaves into the pan and stir for 3-4 mins. Add turmeric powder, coriander powder, red chilli powder to the pan and continue to stir for a few seconds.
  7. Then add the blended mixture into the pan again and stir until well cooked.
  8. Add the diced cottage cheese into the pan and cook at low flame for about 5 minutes. 
  9. Then add half-cup water (or milk of the same ratio) to the pan for a smooth pouring consistency and stir for a few seconds until well-cooked.
  10. Garnish with finely chopped fenugreek leaves, fresh cream and pumpkin seeds before serving. Serve hot with accompaniments of your choice.

For the paratha-

  1. In a mixing bowl, add ground flaxseed powder/linseed meal, chopped dill leaves and whole wheat flour.
  2. Keep adding water as required to knead the mixture into a smooth dough.
  3. Divide the dough into equal portions and roll each of the divided portions into a circular flat bread.
  4. Heat a flat-pan and cook the rolled flat breads to cook well on both sides.
  5. Serve hot with a curry of your choice.
