This serving packs an excellent source of protein and is perfect for vegetarian and vegans alike. What’s more, quinoa cooks quicker than most other grains. While we have put cucumber, bell peppers, broccoli and tomatoes in this salad, experiment with your favorite veggies – zucchini, corn, kale, lettuce or spinach greens to enjoy it. There is no right or wrong way to make a healthy quinoa salad!
What You Will Need:
- 4 cups vegetable broth (or water)
- 1 1/2 cups raw whole grain quinoa
- 1 cucumber, sliced
- 1 orange or red or yellow bell pepper, diced
- 1/2 cup lightly steamed broccoli florets
- 2 tomatoes, chopped
- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 2 cloves garlic, minced
How to Make It:
Three easy steps to make this Triple Delight quick salad:
1.Cook the quinoa in vegetable broth (or water) for about 15 minutes until it fluffs up, stirring occasionally.
2.On the side, whisk together the fresh lemon juice, olive oil, minced garlic cloves and peppers.
3.Once the quinoa is cooked, allow it to cool slightly. Toss it in with the cucumber, broccoli, tomatoes and the lemon juice dressing mix and blend it well. Add salt and pepper to taste. Serve chilled.
