1. What is the difference between all-purpose flour and maida?
All-purpose flour is a bit different from maida as it’s a mixture of hard and soft wheat flour with a higher protein content. Maida is soft wheat flour and thus contains a lower protein content. 2. Do chocolate chip cookies need vanilla extract?
The flavour in this recipe mainly comes from the molasses in the brown sugar and the perfect chocolate-to-salt ratio. But if you want to give your cookies a slight flavour boost, don’t hesitate to add 1 teaspoon of vanilla extract.
3. Should you use chocolate chips or a chocolate bar for chocolate chip cookies?
This is entirely up to you.
Traditionally, chocolate chip cookies are made with chopped up chocolate for a few reasons. The difference comes down to the final texture and flavour. If you want an extra soft cookie, use brown sugar only. If you want a crunchier cookie, use castor sugar only.

5. Should I freeze cookie dough overnight?
It's not required, but it will taste like magic the next day!
Before baking, just let the frozen dough thaw for a few minutes before scooping and baking.

Our favourite add-in combination (pictured above) is chopped walnuts and orange zest. It’s absolutely heavenly, and we’ve added it into the recipe as optional if you want to take it up a few notches.
Ingredients
- 100g One Good butter
- 50g castor sugar
- 100g brown sugar
- 60ml One Good sugar-free mylk
- 190g all-purpose flour
- 2.4g baking soda
- 3g salt
- 135g chocolate, chopped
- 75g walnuts, chopped (optional)
- 1 teaspoon vanilla extract (optional)
- Zest of one large orange (optional)
Procedure
- In a medium-sized bowl, add brown sugar, castor sugar, and butter. With a hand mixer, mix for 1-2 minutes to cream the butter
- Add mylk and optional vanilla extract to the mixture and mix until fluffy
- Add the flour, baking soda, and salt. Mix for about 30 seconds or until combined
- Add chopped chocolate and combine with a spoon. If you want to make orange walnut chocolate chip cookies, add the chopped walnuts and orange zest at this step!
- Cover the bowl with plastic wrap and put into the fridge for 30 minutes
- Preheat oven to 176C (350F)
- Take the dough out of the fridge and make small, 25g balls with your hands. Place each ball on a baking tray lined with either a silicon mat or baking paper about 3 cm apart
- Place the tray into the oven on the center rack and bake for 10 minutes. Rotate the tray after 5 minutes
- The cookies are done when they look slightly underdone, but they aren’t shiny and glossy like cookie dough. The edges will also start looking a little brown. This can take up to 15 minutes
- Cool them on a cooling rack and enjoy!
How do you store chocolate chip cookies?
You can store baked chocolate chip cookies in an airtight container at room temperature for up to 4 days, depending on the climate you live in.
If you want them to last longer, you can securely wrap them in plastic wrap and place them inside an airtight container in the fridge to extend the shelf life for a couple extra days.
If you want to keep them around for a while, you can store the dough or the baked cookies in the freezer for up to 6 months! You will just have to wrap them very well, as the cold air will completely dry them out. Just bake or microwave them to enjoy all over again!
